Better Italian food starts with a great noodle shape. Cavatelli is a common variety of pasta found in southern Italy, often paired with turnip greens or sautéed broccoli. The noodles are made using ground flour from the center of durum wheat, which makes for better tasting pasta that holds its shape and more sauce. It's organic and made by the guy who creates pasta for Frankies Spuntino, one of NYC's most revered Italian eateries.
