Japanese Hinoki Cutting Board – Medium

When you're using your best kitchen knives to prepare a meal — say, one of the ones Shun makes, for example — you want to make sure you're protecting your blades as much as you can, so those edges stay as sharp as possible, for as long as possible. That's why this board is made from Japanese cypress, a medium-soft wood that gives a bit as you cut, preserving your finest cutlery. It's sustainably-sourced, too: Shun's Forest Stewardship Council-certified hinoki products are grown in Japan, all made from wood gathered from forest thinning, which necessary for maintaining healthy ecosystem growth.
