We've finally gotten our hands on the latest offering from Shun Cutlery — and it does not disappoint. If you're not familiar, the Kiritsuke is a Japanese master chef's knife, suited to meat and fish just as it is to thick root veggies. This particular Kiritsuke is a Damascus-clad blade, a full-tang piece with smooth, ebony Pakkawood handle. The 16° double-bevel edge is ideal for slicing, push cuts, and rocking cuts; with plenty of heft to portion proteins, but a tip precise enough for cleaning fugu fish.
