Burnt Sugar Syrup

A syrup both bitter and sweet.

Using burnt sugar is an excellent way for any bartender to experiment in adding depth and bittersweet complexity to his cocktails. This sugar is made from slowly cooking unrefined cane grains until they are dark and aromatic. By taking the sugar past the caramelization stage, a tartness is reached, providing an exciting contrast to tropical or sour drinks.
